Our Corvina portions are fresh frozen once, individually vacuum packed and center cut from the top loin of a Golden Corvina fillet. Corvina is a white firm fish similar to sea bass. It has a mild, sweet taste with firm, large flaked flesh. Pinkish when raw, but cooks up white. Although it is considered a versatile fish and one of the most popular fish in Latin America, ceviche is a probably the most popular recipe for this species. It is also great when grill, baked or fried.
